Festive Cheese Spread
Need a quick appetizer to satisfy your guests' hunger until you're ready to serve your main course? Place this simple-to-make pineapple, ham and blue cheese spread on toasted French bread (crostini) or your favorite crackers. And it's a recipe that offers a lot of variety. You can omit the ham and still have a delicious cheesy spread. It even works for breakfast.

  • For Spread
  • 4 Tablespoons sweet pickle relish
  • 1/2 cup blue cheese, crumbled
  • 2 Tablespoons mayonnaise
  • 2 Tablespoons pimento, diced, or red bell pepper, diced, plus extra for sprinkling
  • One 8-ounce can crushed pineapple in juice, drained
  • 2 scallions, sliced thin
  • 1/2 cup ham, chopped
  • One 8-ounce package cream cheese or goat cheese, softened
  • For French Bread
  • 2 baguettes, sliced into 1/2-inch pieces
  • 1/4 cup olive oil, for brushing
  • Optional
  • Favorite crackers
  • Fresh herbs, to taste
  • 6 flour tortillas

    Place all ingredients except bread into medium-size bowl.

    Stir with a wooden spoon or electric mixer until completely combined.

  • 3.

    The spread can be kept refrigerated in a tightly sealed Ziploc® Brand container for several days until ready to use.

  • 4.

    When ready to use, slice baguette into 1/2-inch slices. Lightly brush each slice with olive oil. Place under the broiler to toast, about 1 minute. (Watch carefully so the bread doesn't burn.)

  • 5.

    Take bread from oven and let cool for five minutes before spreading on each slice. Top with a sprinkling of pimento or red pepper, depending on what you used in the spread.

Chef's Note:

You can use this spread to make tortilla roll-ups. When ready to eat, add fresh herbs to the spread and coat each of the six tortillas evenly with the mixture. Gently but tightly roll up the tortillas into cylindrical shapes. Cut the tortillas into 1/2-inch slices and serve. Each tortilla should yield 8 slices.
