Cut bell pepper in half from top to bottom. Seal bell pepper in a Ziploc® Zip'n Steam® Bag and place in microwave.

Precook bell pepper on full power for 1 minute to soften. Allow bell pepper to stand 1 minute before handling. Carefully open bag and remove pepper. Set bag aside.

Prepare filling by combining all ingredients in a medium bowl, stirring well. Spoon filling into pepper halves, dividing the filling equally, mounding it slightly if needed. If any water remains in bowl, spoon it onto filling, distributing it evenly among peppers. Transfer stuffed peppers back into Ziploc® Brand Zip'n Steam® bag.

Seal bag and place in microwave for second time.

Microwave on full power for 2 1/2 minutes for 2 servings or for 3 1/2 minutes for 4 servings.

Allow bag to stand for 5 minutes before handling. This stand time is important for the couscous to absorb moisture and fluff up. Carefully open bag, remove peppers, and serve. Garnish with black or green olives if desired.
