Makes 2 Servings
  • 2 skinless, boneless chicken breast halves (about 4 ounces each)
  • 1 medium zucchini, halved lengthwise and sliced crosswise into 1/4-inch-thick halves
  • One 11-ounce can mandarin oranges in light syrup, drained
  • 1 Tablespoon ponzu (citrus-soy) sauce OR tamari sauce
  • 1 teaspoon hot chili oil
  • 1 teaspoon cornstarch
  • 1 Tablespoon grated fresh ginger OR 1 teaspoon ground ginger
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • Garnish
  • 2 Tablespoons chopped fresh cilantro and lime wedges

    Combine all ingredients except garnish in a Medium Ziploc® Zip'n Steam® Bag.

  • 2.

    Seal bag and shake gently to combine ingredients. Pat ingredients into single layer. Place bag in microwave.

  • 3.

    Microwave on full power for 5 to 6 minutes or until chicken is cooked through.

  • 4.

    Allow bag to stand for 1 minute before handling. Carefully open bag.

  • 5.

    Serve chicken, cut into thirds, with zucchini, oranges and sauce spooned over top. Garnish as desired with 2 Tablespoons chopped fresh cilantro and lime wedges.
